  • 1 2 bunch english spinach stems removed leaves washed dried
  • 500g minced chicken breast fillets
  • 25g 1 4 cup dried packaged breadcrumbs
  • 60ml 1 4 cup reduced fat milk
  • 1 egg
  • 6 green shallots finely chopped
  • 1 tablespoon sun dried tomato paste
  • 1 tablespoon drained capers finely chopped
  • 1 small fresh red chilli halved deseeded finely chopped
  • salt ground black pepper
  • 1 30cm loaf turkish bread
  • 100g low fat hummus

  • finely chop 8 large about 50g spinach leaves place the chopped spinach minced chicken breadcrumbs milk egg green shallots tomato paste capers and chilli in a medium bowl season with salt and pepper and mix well
  • preheat grill on high press chicken mixture evenly over base of a 25cm base measurement non stick frying pan cook over medium heat for 5 6 minutes or until cooked halfway through
  • place the pan under preheated grill and cook for 6 7 minutes or until golden and just cooked through cut evenly into 8 wedges cover the pan with foil to keep warm
  • cut the bread crossways into 4 even portions and split each portion in half horizontally toast under preheated grill for 1 2 minutes each side or until golden
  • to serve top the bread bases with the remaining spinach leaves and then the burger wedges spoon the hummus on top and cover with the top half of the bread
