  • 1 2 cup raisins chopped
  • 2 teaspoons lemon zest finely grated
  • 2 x 800g coles brand boneless lamb leg roasts
  • 1 tablespoon coles brand pure olive oil

  • preheat oven to 190c or 170c fan forced combine oregano raisins and lemon zest in a small bowl untie the meat and open out fill with raisin mixture in a line down the centre of each piece reshape and tie securely with kitchen string
  • place lamb in a large lightly oiled baking dish brush with oil and season well with salt and freshly ground black pepper pour 1 2 cup water into base of dish
